Abstract
Konawe Utara District, Southeast Sulawesi Province, is one of the Regencies in Southeast Sulawesi that has the potential of very large pokea clam and snakehead fish, which are obtained by direct capture of river and swamp habitats, where the two commodities are one of the main food ingredients in consumption local people's food and in Southeast Sulawesi in general. The catch of pokea clam and snakehead fish is still sold in fresh form and processed by smoking. However, the smoking process is still very traditional, where the smoking stove is still very simple, with the quality of raw materials of pokea clam and snakehead fish that are not be regular, the smoke material used is not stagnant, and the smoking method is long time, temperature and smoking sanitation insufficient. In addition, the process room that has not been organized, as well as the marketing chain that has not been optimal, has become a number of weaknesses in the smoking industry. The facts about the industrial conditions, then the PPPUD goal of the industry of pokea clam and snakehead fish smoked is to improve product quality, increase the selling value of products, and increase the income of processing communities that are competitive, and increase local revenue originating from fishery commodities. as a superior product in the area of Konawe Utara District, Southeast Sulawesi. The results of the PPPUD activity in this first year were that partners were given safer, hygienic and attractive technology of cabinet smoking technology, which would have an impact on the quality of the higher quality pokea clam and smoked snakehead fish products, which would increase the selling value of the product.
